Dr. McDougall’s Vegan Meal Plan Day 4: Lunch Only

Sorry for the delay between day 3 and 4. I went on vacation and had a nasty cold so I am just getting back to the computer. I am still sick though. What is with these summer colds everyone is getting? My father has double pneumonia my husband is heading toward bronchitis and even the baby had the sniffles. Well, nothing a little oatmeal and about a bucket of drinking water and ten cups of tea hasn’t seemed to handle well enough! Back to reviews of this awesome vegan meal plan.

Day 4: Teriyaki Flavored Organic Asian Noodles

 

So I am finding with all the organic Asian noodle cups that they are slightly sweet. I am not sure entirely what this is accounted from, I checked the label and it only had 8 sugar grams. So I guess it must be something in the sauce. It isn’t a good or bad thing it is simply something I am coming to notice and a pinch of me wishes it wasn’t quite that sweet and a little more savory. The noodles I love though. They remind me of an egg noodle with their elasticity. They have such a good chew to them for being a microwaveable noodle cup. I expect mushy ramen but get these really great quality ones instead. I have also come to find out that many of my local whole foods carry a limited variety of these cups so i may be able to buy more from the store in the future and not just in bulk over the internet. Save the shipping cost. At Whole Foods the cups were all about $1.99. So I think that was a pretty good deal. Now back to the flavor, it is a nice rich terriyaki flavor. Coworkers walked buy adn said wow who is eating that it smells so good. My only comment between mouthfuls: “It actually is really good!” I really have yet to complain about this brand and it is kinda scaring me. I run into so many boring “vegan” meals out there or ones with bad consistency or weird flavors. This has been surprisingly spot on. Bonus to the whole I am losing weight thing for sure! As for the breakfasts, that oatmeal is still killing it. I am so full from it, I can’t even explain what does it but I am stuffed after breakfast! So far, so amazing!

The Easiest Monkey Bread Recipe Ever with @earth_balance and @Pillsbury Crescent Rolls #vegan

Every Christmas my mother would make cinnamon rolls for breakfast and we would snack on their sugary, gooeyness while opening gifts on the living room floor. Recently I have either have to make my own from scratch which can be a two day process or buy some that are vegan. This year my mom bought some online from someplace and they were actually pretty awesome. Some company she saw on Shark Tank I guess. However, I was looking for an easier option that I didn’t need to ship in for $100 or make for days. I am a lazy mom of a new infant and all my time is taken up either cooking, cleaning, burping, feeding, changing, or working. I barely sleep. So when I came across a Pillsbury recipe for monkey bread I thought oooooh I can veganize this. AND. I. DID. Bam!

It was amazing, the whole thing was eaten by 4 people in a gluttonous feast that lasted less than an hour. We were gross I know, but it was that good. Enjoy!

Vegan Monkey Bread

INGREDIENTS:

  • (4) Tubes of Pillsbury Crescent Rolls
  • Brown Sugar
  • Cinnamon
  • Soy Creamer
  • Pam Canola Cooking Spray
  • (1) Earth Balance Buttery Stick
  • Optional: Nuts

  1. Preheat oven to 350 degrees.
  2. In a bundt cake pan, spray with cooking spray and then start pulling apart crescent roll dough and balling it up and dropping it into the pan.
  3. After each tube sprinkle a layer of brown sugar and cinnamon very lightly over the dough balls, then continue balling up the next tube worth of dough. The balls should be small about 1/2 to 1 inch in diameter. I also sprinkled in walnuts at this point but any nut will do like pecans, walnuts, etc.
  4. After all dough is in the pan and everything is sprinkled, get a sauce pan and place the stick of earth balance butter in it to melt down over medium heat.
  5. Once melted add 1 cup of brown sugar and 1/2 cup of creamer. Stir until combined into a soupy caramel sauce. I sometimes add a pinch of salt as well.
  6. Pour sauce evenly over the entire bundt pan of dough balls. I try going around the circle from the outside in to make sure I get some on everything.
  7. Note that the bundt pan will not be filled completely but will bake all the way tot he top once the dough rises in the oven.                monkey bread 6
  8. Place in oven and bake for 45-50 minutes.
  9. When it comes out i used a plastic spatula around the edges of the bundt cake pan first before I tipped it over onto the plate in order to serve it. Otherwise the caramel sticks and it won’t come out of the pan.
  10. Serve hot. Pick apart and enjoy!

Traveling Vegan in NYC Part II: Restaurant Reviews, Food, Places that Closed, and Heaven on a Plate.

 

 

 

 

 

I love New York City. It is just really one of the World’s treasures. For vegans it is a resource that is unmatched in the United States. It has ever culinary wish you could make and every creative food your palate could desire. I always talk to my husband about where I want to go eat if I were in NYC right now. He has obviously been listening because the other week he said “Let’s go away for the weekend!” I was excited but careful. For me, money is always tight and I want to budget. So I pre-planned everything, every restaurant and activity and even snacks. We left a little late on Saturday and realized halfway there that although we did plan for the dog’s accommodations, hubby left the house without her leash on. He then fell asleep for most of the ride until he woke up and told me.

So a short stop in Petsmart (or was it Petco) in Connecticut and back onto the highway. We got there in a reasonable amount of time regardless and I was so excited to start my culinary adventure. First however, we had to check in. My dog Lola was so excited to get out of the car and into the hotel to meet everyone. Did I mention it was about 10 degrees out? Thanks polar blast for that cold wave.

MARRIOTT CENTRAL PARKAccommodations

 

The staff at the Marriott Central Park was equally excited. It was a beautiful new hotel that just opened and we were staying in the Courtyard Marriott section but there is also a Marriott Residence Inn section making it the tallest hotel in the Western Hemisphere. Very cool. The staff is great and so was the hotel. I recommend it to everyone and anyone. Can’t go wrong with Marriott especially on Broadway between Times Square and Central Park near 5th Ave.

DUN-WELL DOUGHNUTS: BREAKFAST / SNACK

After the bellman brought up the luggage and the valet took the car away. We headed across the Williamsburg Bridge to Dun-well Doughnuts. I met a man in line who helped me pick his favorites and a few other fun donuts for our half dozen box while my husband ran across the street to a local Bodega to get money from the ATM. It gave him all tens which he still thinks is the most hilarious thing in the world. I grabbed a vegan hot cocoa and a coffee for the hubby and we sat at the window to begin our feast. WOW was my first words. The donuts are those spot on sweet but not too sweet yeasty dreamy fluffs of heaven. They flavors and coatings are far from average and not at all tasting of “fake” fruit flavors or funny after tastes. They are as close to perfect as I can think. I just wish they were in Boston so I could get fatter by eating them every day.

Foodswings: Lunch (closed)

Next we decided to walk the 1.5 miles over to Foodswings in Brooklyn on the Park Slope Brooklyn Bridge side of Brooklyn. This place is known for amazing home style eats. Burgers, mac n cheese, and fried chicken but all vegan all the time. One problem when we walked up the gate was down. So we saw a door to the right and walked down a long kinda shady hallway into a speakeasy door to find a girl sitting at a bar eating corn chips and salsa alone. This was not Foodswings. I walked out to find another couple doing the same thing and I agreed to check my phone Facebook to see what was up. They had announced in the beginning of the month that their lease was up and they had a fight with their landlord and would close at the end of the month. It wasn’t the end of the month but this explained it I guess. I was pretty upset that they didn’t bother and update their website, twitter, or FB when they actually closed. It was kinda a stinky move on their part. I met them at The Seed conference a few years ago and had their fried chicken and they seemed cool. But I guess time and business changes folks. oh well! (Note: I checked today on FB and they posted that a few days later (after I left a message on their twitter) they stated on FB they had been closed all week and reopened for a few days and closed again for good, thanks for telling us after you were closed a week. Really not impressed guys.)

 

PEACEFOOD CAFE: LUNCH / SNACK

We caught a cab bag to Manhattan and got ready for the dinner of the year. The vegan epicenter of high end vegan food…. Candle 79. We stopped at Peacefood Cafe first though for a snack since our lunch was now cancelled and because a twitter follower commented that she could eat her “weight” in their chickpea fries. All I know is I ordered a seitan medallion sandwich, chickpea fries, and a key lime pie to go and the seitan sandwich could’ve caused my husband and I to divorce and ask for custody over it so we didn’t have to share. It was THAT good. My only complaint. The key lime pie must have sat near onions in the fridge. The taste transferred into the tofu base. Not good but you could tell it would’ve been.

Then Candle 79 after a quick trip back to the hotel to walk the dog and freshen up for dinner.

 

CANDLE 79: DINNER

I will be honest, I thought Candle 79 was going to be all talk. I had heard it was good but too pricey and that it didn’t live up to the hype. However, it is someplace you just have to go no matter what other folks say because it does have quite a celebrity following. The truth? It is actually THAT good. The menu is daunting. You want to order everything but are unsure. The prices are high but that is the type of restaurant it is. Think Morton’s or the Palm without the meat. The hostess was delightful and took our coats. A rude customer came in behind us and was quite demanding that he be seated before us (we had a reservation as did he) but she handled it with the grace of a ballerina and assured him he had a table and she would be right back. We were brought down the long thin first floor up some stairs to the second floor overlooking 79th. It was a nice view bu there was a huge flower display in the window that blocked some of it. The ceilings were gorgeous and made of several colors of wood. The staff was attentive and polite. I ordered a kola (which reminds me of coke in the Caribbean), a Caesar salad, and the Seitan Piccatta. My husband ordered the dumplings appetizer and the Rosemary-Balsamic Grilled Seitan. My salad was wonderful. I had wanted a Caesar salad since I had gone vegan but had never had one. While we waited a waited came over and told me that the chef sent out a appetizer for us to try. It was a lentil filled spoon with some jalapenos and maybe celery? Whatever it was it was fresh and a little spicy and a perfect bite. I thanked him and the chef immensely, it was an honor. When the salad came it was tangy and filling and the little Parmesan crisp were perfect. The shocker was the grilled “chicken” on it. It tasted 100% real deal like a grilled chicken. Even my husband was shocked. He ate what I didn’t finish. I tried his dumplings which were good but I should’ve dipped more sauce. The Seitan Piccatta was outstanding. They only tiny change I would made. Making it thinner and not stacking it on top of each other. That’s it. Kinda lame but it’s the little things sometimes. My husband was enamored with his seitan as it tasted like real beef. I did not like steak much before going vegan so I wasn’t shocked I did not love his dish but it was real deal beef flavored and textured. The sides were good though! Then dessert was ordered. OMG dessert. This is the best dessert I have ever had at any time in my life. Pure heaven on a plate. We got 3 desserts to share as my husband is a sugar addict. We ordered the flan, chocolate brownie, and the chocolate peanut butter truffle. The flan was heaven on earth. I would probably not have shared if my husband hadn’t just snagged a piece. The brownie was pure chocolate decadence with divine ice cream. The ice cream on the flan was also just sublime. The peanut butter chocolate truffle thing was too chocolatey for me but perfect for my husband. he loves a good death by chocolate flourless cake and this was more chocolate than peanut butter so he was happy. I would eat there every day if I could.

Blossom Cafe: Sunday Brunch

The next morning we arose bright and early to have brunch with my old college roommate Andrea. She is one of those amazing NYC girls that is so well read and refined yet relaxed and fun that you can bring her anywhere and she will have been there or know the owner or have a story about it. She had been to Blossom but she isn’t vegan. She ordered the grilled cheese, my husband ordered the stuffed french toast (and ate half of it before I could snap a photo!), and I ordered the country brunch platter. Everyone was quiet and cleaned their plates. Like my grandmother would say, we were all part of the “Clean Plate Club”. I especially loved my chutney, scramble, and the fried sweet potato. I mean it was all good but that chutney! Yummm…

AMERICAN MUSEUM OF NATURAL HISTORY

We dropped off Lola with a dog walker for the afternoon so she could play in the upper east side and Central park. I couldn’t bare to leave her in the hotel all day. Then the hubby and I ran off to the Museum of Natural History on the upper west side. It is one of my favorite places in the world. It is so fun and beautiful to look at and if you can’t afford to pay it is free. We paid but you don’t have to or you can pick what you want to pay. It is pretty amazing that they do that for folks.

V-NOTE: SUNDAY DINNER

We then embarked on a new high end restaurant and wine bar for an early 5 pm dinner. It is supposed to rival (if not exceed) Candle 79 in food, wine, and service and is owned by the folks from Blossom. It is on the upper east side and although they did have one outstanding item on the menu, I wouldn’t go back. Mainly because of service but the food wasn’t great either except for the one item. It was just barely okay. We changed our reservation from 630 pm to 5 or 530 pm and arrived early. We were seated right away and the place was almost entirely empty. There was a couple at a table and a man who looked like he worked there, drinking at the bar. That was the first not so good sign. A man who looked like his twin was our server (brothers?). He came over and was friendly enough but was slow. He didn’t refill glasses, he had a busboy bring our food, and when the rush came in at 6-630 ish he started forgetting our order but didn’t forget to charge us for what we didn’t get. When I went to the bathroom (which was not very clean), I overheard him saying that an article written on a tablet the other female server (the only two staff on the floor) had was “not good” for their business. I understood right away that they got a bad review and honestly, I wasn’t shocked. I had to bring the bill up to the female waiter to explain the bill was wrong since he refused to come back for us to pay. She said oh okay I will take it off and he came up behind me and said “What’s the problem?” I explained he had charged us for items he never brought us and he said “Well you know we got slammed”. That isn’t an excuse in my book. You are a waiter, you deliver food. I didn’t ask for anything outside of this. You will get slammed every night in NYC. You should still be able to do your job. The only good thing: the mushroom risotto. Order it to go and you will be in heaven.

IMG_3035 Fondue. Tiniest amount of chocolate ever with barely any fruit and 2 cookies cut in half and two pretzel sticks for I think $16. Lame.

 

 

 

HOME

We picked up Lola after that from her dog walker and headed back to the hotel to pack and go home. The dog walker was amazing and you should use her services if you are ever in town. I will post a link soon! I was happy with the trip overall and even more happy to have picked up a vegan guide to NYC at Dun-well along the way. Although Foodswings and V-Note were a big buildup with little return. They other places more than made up for it and I have a book of new places to start trying! Please feel free to tell me more places to go next. I can’t wait for another traveling vegan trip! Maybe I will see you in your town!

Ooey Gooey Vegan S’mores Cheesecake Trifle

I joined the Wellness Committee at my work a few months back. I thought it was important to have a truly opposite opinion to the mainstream ideas of health in such a  group. One that focused not on conventional “healthy” recipes and ways of being “well” but one that is a little more alternative. I am obviously a vegan but I am also a bit of a hippie and very interested in how wellness is also about being mentally well and taking care of the earth to result in healthy food and a healthy planet. This holiday season we had a Christmas/Holiday/Seasonal get together/luncheon at work. The Wellness Group sponsored it and although it was healthi-er I think we have a long way to go. I must say that I did prepare a not so perfectly healthy trifle for the baking contest so I am as much at fault as anyone on the healthiness of this luncheon. To me this recipe is far from healthy but for the group, I think they will find it the healthiest option on the table with all things considered. Take a look and Happy Holidays! S’mores Cheesecake Trifle

Ingredients:

  • 2 packages Vegan Marshmallows
  • 2 containers Tofutti Better than Cream Cheese
  • 2 cans of Coconut Milk (refrigerated overnight or longer to separate)
  • 1 cup powdered organic vegan sugar
  • 1 squeeze bottle of Breyer’s Hot Fudge Sauce (vegan and sold at Walmart)
  • 1 box of Fudge Brownie Mix (Betty Crocker is vegan)
  • 2 cans of pureed pumpkin
  • 1 box Chocolate Cake Mix (many vegan varieties are available)
  • 1 package of graham crackers

Preparation:

  1. Preheat your oven to 350 degrees.

  3. Get out (2) medium mixing bowls.
  4. Get 1 smaller pie pan and 1 regular sized cake pan.
  5. Get out your trifle container.

  7. Spray cake and pie pan with Coconut Oil spray or some Pam-type equivalent of canola oil.
  8. Open cans of coconut milk and slowly remove top layer of coconut milk fat and leave coconut water at the bottom. Try to remove as little wet material as possible. Place in one mixing bowl with cream cheese. Mix until combined well. Sift in powdered sugar with a sieve or squeeze sifter. I use a plastic $1.99 sieve I got at the Chinese grocery store and it works great. No need for anything fancy! Place bowl of cream in refrigerator.

  10. In second bowl prepare brownie mix with one can of pureed pumpkin. Combine the two until smooth. Place in Pie Pan.

  12. In the second bowl (do not wipe) add cake mix and 2nd can of pureed pumpkin. Combine well until smooth and place batter in cake pan.

Cooking:

  1. Place both batters into oven. The cake will take approximately 30 minutes and the brownies will take approximately 50-55 minutes.

  3. Take squeeze fudge and line the bottom of the trifle bowl. The cake will be going in the bottom and tends to be crumbly. This will give the appearance on the exterior glass of a neat chocolate line while also keeping the moisture of the cake in.

  5. Next, cut or tear marshmallows in half. This will allow for them to be stuck to the glass and cake when layering.
  6. When the cake comes out. Take the trifle bowl and press through to the bottom of the pan. This will create a circular indent. Most trifle bowls are smaller on the bottom than the top. That is why you place the cake and not brownie in the bottom. Cake will squish down and together so it will fit despite the slight size difference.

  8. Flip the pan over on a wire rack to unlodge from pan and cool.

  10. Once cool, tear away edges from the circular imprint and press down into the trifle bowl.

  12. The fudge will make up for any imperfections. Feel free to add more fudge in a circle on top to finish the layer. Then place a few dots on top of the cake to prepare for marshmallows.

  14. Press marshmallows up against the glass all around the bowl and then on top of the cake/fudge layer.

  16. Take out a creme brulee style kitchen torch and brown the cake layers. Be careful lot to get too close the the glass. Not all glass is heat friendly.

  18. Fill in holes between marshmallows with some fudge. Then crumble graham crackers on top. I used 1 package from a box. Approximately 8 sheets (you can reserve some for top layer if you want or just use more!).

  20. Next place 1/3 of the cheesecake cream in the center of the crackers but try to avoid bringing the liquid too close to the edges.

  22. Now add the brownie layer once it has been removed from the oven and cooled on a wire rack. You do not need to make a circular cut on this. Simply cut a triangular piece of brownie out of the “pie” and then it will allow for you to fold it into the trifle bowl by almost overlapping the edges where the cut was made. It also allows for you to have a snack 🙂

  24. Next add the rest of the cheesecake cream and decorate with marshmallows, fudge, and crumbled grahams. I like to line the edge again with marshmallows and place a dollop of fudge between for a nice finish on it 🙂

Perfect. Toll-House-Style. Vegan. Chocolate Chip Cookies.

I love chocolate chip cookies. I love chocolate chip cookie dough even more. And in an honest, yet disgusting unveiling of my inner glutton, I love when you cream the butter, vanilla, and sugar together to make chocolate chip cookies. When I was a kid I used to try to steal dollops of the creamed mixture when my mom wasn’t looking. It was so good. I am glad I didn’t know about salmonella poisoning back then or the fat content of whole butter. Luckily with vegan baking, that salmonella is never a problem so yea… eat all the cookie dough you want! Also my brother is coming for Thanksgiving Dessert with his wife and my first and only nephew Baby Nolan and he (my brother) is a cookie monster, so I wanted to be able to make him chocolate chip cookies that I could also eat and so could any of my dairy intolerant family. My brother loves cookies so much I got him a replica cookie jar from our childhood for Christmas last year and it was not easy to find an owl cookie jar either! This will definitely be an experience thanks to my cookies 🙂

That being said here is my chocolate chip cookie recipe that I have been working on for ages. Every time I start I become uninspired by dry cookie dough (which every vegan can relate to due to the lack of eggs) and of course the ones that crumble or the ones that don’t taste quite right. These are not any of those. They are gooey and crunchy on the edges and melt until they are just thin enough but still soft inside. If you love cookies… you will also love me after you make this recipe.

Perfect Chocolate Chip Cookies

  1. 1 cup of earth balance organic buttery spread
  2. 2-3 tablespoons of maple syrup
  3. 3 flax eggs (3 tablespoons of water and 1 tbsp powdered flax per egg)
  4. 2 tablespoons of vanilla extract (I use Penzey’s Mexican)
  5. 1 and 1/4 cups of vegan sugar (try half brown sugar if you have it for a richer flavor)
  6. 2.5 cups of all purpose unbleached flour
  7. 1-2 teaspoons of salt (I use kosher)
  8. 1 cup of vegan semisweet chocolate chips (I used Kirkland (Costco brand) this time instead of Whole Foods)

MIXING TIME!

  • Place all dry ingredients (except chocolate) in a medium to small bowl. Mix until well combined.

  • Cream butter and sugar together in a larger bowl with a mixer. Then place all wet ingredients into the bowl and mix until well combined.

  • If you have never made a flax egg all you do is place warm water in a bowl and pulverize flaxseeds in a coffee grinder until powdered and stir. It’s that easy.

  • Slowly add dry ingredients to wet ingredients and mix until a dough forms. I use my hands but a mixer works well too.

  • Last toss in chocolate chips and any nuts and knead into the dough. It will be a little oily.

BAKE:

  • Preheat oven to 350 degrees.
  • Place a silpat or parchment on your baking sheet. These cookies WILL STICK OTHERWISE! This is very important.
  • Once the oven is completely preheated, place balls of cookie dough on the silpat or parchment lined cookie sheets.
  • Bake for 20-22minutes.

My Vegan and Omnivore Family Thanksgiving Menu

I am going to officially post my Thanksgiving Day menu here for all to see. I know there will be questions and recipes wanted and over the next week I will try to post those too. I truly delight in the Holiday cooking I get to do. Making food for my family and friends is fun because not only do you get the joy of the cooking process but you get the joy of watching others feel happy and healthy and nourished and maybe a little stuffed on something you created. I also find it amazing how we extract things from the earth to make our bodies fuel. One would say if something is on the ground not to eat it but Thanksgiving is the holiday of root vegetables. Of course they get a heavy rinsing but its kind of a strange concept how we shun some things afoot but not others if prepared properly.

I know there will be confusion as some of these items are not vegan but I do have an all omnivore family so I pepper in a few items that are not vegan (*denoted with an asterisk* ). Prosciutto Pear Cups are not vegan. They are a Martha Stewart recipe that I used to make pre-vegan and my family still asks for and I make in mini muffin pans chopping the pears into tiny pieces and tossing with shreds of fresh Parmesan. The cheese will be a mix of vegan and vegetarian. I eat honey but I know many vegans do not so I denoted it with an asterisk (and you can always use agave!). The turkey and gravy is not vegan (obviously) but there is a mushroom alternative and my own vegan Field Roast Turkey. Everything else is vegan. The potato au gratin is one of my favorite things to make and the cranberry upside down cake has become a requested staple from my husband and was of my late grandmother. Enjoy!

Banana Bread Bars

There are very few things that can make me feel as cozy as banana bread. My mom would make it all the time when I was a kid (and would even bring it to my dorm in college sometimes). Saving up all the brown bananas we didn’t eat in time and putting them in the freezer. When she had enough she would make the whole house smell like heaven and it was hard to keep us back long enough for the banana bread to cool so she could cut a slice for my brother and I. My grandmother would cozy up next to me with some tea and her banana bread and on those chilly fall days we would watch infomercials and old movies at my parents house. So when I got a tweet on Twitter the other day from a follower that wanted to use up some Chia seeds I thought what better way than to give out my banana bread bars recipe! The recipe is easy and just requires dumping everything in a bowl and mixing and then placing it in the oven. The weather was cool over the weekend so I made a batch as a breakfast snack for my husband and I this week. They were also snacked on by both my parents yesterday while we continued mounting new things to the walls of my new house.  Note: I bribe family and friends with dinner and snacks for free labor 🙂

Banana Bread Bars

 

Ingredients:

(3) Bananas (overripe and brown is best)

1 1/2 cup Quick Oats

1 tsp tapioca granulated

2 tbsp chia seeds

1/4 cup of Raw Agave Syrup/Nectar

1/4 cup raw unsalted pistachios

1/4 cup shredded sweetened coconut

1/4 cup chopped pecans

1/4 cup white chocolate chips (I use Lieber’s White Decorative Chips)

Spectrum Coconut Oil Spray for pan

Preparation:

  • Place white chips, nuts, seeds, coconut, and tapicoa in a medium mixing bowl and stir until combined.
  • Add quick oats. Stir until combined.
  • Add bananas (i ususally microwave frozen bananas for 1 minute and then add them). Mix until thick adn well combined throughout.
  • Add agave and fold in.

Cook!

  • Preheat oven to 350 degrees.
  • Spray a bread pan with coconut oil.
  • Place bar mixture into bread pan and pat flat with spatula.
  • Bake for 30-40minutes until the sides turn brown and the center is firm tot he touch.
  • Cut into 6 bars and serve after cooled about 15-30minutes.
  • Enjoy!

Lemon Blueberry Breakfast Bundt Cake

I use two cookbooks when making cakes in most cases either Chef Chloe’s cookbook “Chloe’s Kitchen” or the “Joy of Vegan Baking”. The Joy of Vegan Baking has an excellent Lemon Blueberry Loaf Cake Recipe if I remember correctly. For the purposes of this cake we are doctoring up Chef Chloe’s vanilla cake recipe (www.chefchloe.com) and making it a lemon blueberry cake for brunch in honor of my Mother’s birthday this past week.

My family is big on brunch. We do Easter brunch every year and for most informal birthday or family get togethers. We are great at doing brunch and I have been to so many hotel brunches all over the world I feel spoiled by them during my Sunday indulgences. I think that brunch is so much fun for everyone because it encourages good eating through small portions and copious amounts of veggie and fruit options even when they are not always attached to vegan items. There are fruit cups, quiches, and omelettes filled with veggie fillings so I am all about it! However, the pastries and baked goods are always filled with eggs and dairy so I am going to change that today with this travel friendly recipe to bring to your next family soiree. I promise everyone will love it. I have made it for a potluck at work a few years ago and recently for a family get together after the funeral of my grandmother and as the only vegan I always suffer the “this tastes different” criticism. But not with this cake. Even my Dad was found picking at it long after brunch was over!

Lemon Blueberry Bundt Cake

Ingredients:

  • 1 lemon
  • 1 cup of fresh blueberries (plus 1 cup for garnish)
  • 1 jar lemon marmalade (for garnish)
  • 1 tbsp of Lemon Extract
  • 3 cups all-purpose flour (or gluten-free all-purpose flour plus 1 ½ teaspoon xanthan gum)
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 ¾ cups soy milk
  • 1 cup canola oil
  • ¼ cup white or apple cider vinegar (I use ACV not white)
  • 1 tablespoon pure vanilla extract (I use Penzey’s Mexican Vanilla Extract)

TIME TO BAKE!

Chef Chloe’s Vanilla Cake Recipe with my additions in bold caps:

  1. Preheat the oven to 350 degrees F. Lightly grease three 8 or 9-inch round cake pans and line the bottoms with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking soda, and salt. In a separate bowl, whisk together nondairy milk (I USE ORGANIC SOYMILK) , oil, vinegar, and vanilla (ALSO ADD THE ZEST OF ONE LEMON RIND AND 1TBSP OF LEMON EXTRACT AND 2 TBSP OF LEMON JUICE.)
  3. Pour the wet mixture into the dry mixture and whisk until just combined. Do not over mix. (THEN SPRINKLE 1 CUP OF FRESH BLUEBERRIES LIGHTLY WITH FLOUR AND FOLD INTO BATTER. THE FLOUR HELPS THEM FROM SINKING STRAIGHT TO THE BOTTOM OF THE CAKE PAN.)
  4. Fill each prepared (BUNDT) cake pan evenly with batter. Bake for (20-30) minutes, or until a toothpick inserted in the center of the cake comes out clean with a few crumbs clinging to it. Rotate the cakes halfway through the baking time. Cool the cakes completely before assembly.
  5. I then flip the cake over on a cake pedestle and sprinkle with powdered sugar and garnish with fresh blueberries in the center. I serve this with lemon marmalade that I buy when it is on sale at Christmas Tree Shops since they are famous for having sales on jars of jellies.

Grilling for Vegans: What to Eat and How to Make it

As grilling season approaches I realize that my husband gets so excited his heart may just explode. I say it is from the meat heavy dishes and he says it is from the amazing Weber Grill my father got him as a present. Whatever the case is I make him grill me veggie burgers, corn, whatever. And he has started to become an expert. No grill baskets needed. So here is my veg-lovers guide to eating at a barbecue without all the looks (except of envy) and the extra equipment!

1. Invest in fresh veggies. The frozen kind will not be able to hold up to direct fire. Save those for the wintertime when you are feeling lethargic and uninspired.

2. Buy tinfoil/aluminum foil. This is a cheaper but I admit a less ecofriendly option to grill baskets but it is reasonable especially when you have a bunch of people hitting up your home on a hot day. You can just toss out the oil salty foil after and worry about that sink another day. And no cross contamination!

3. Invest in an olive oil mist sprayer. I have the one from Macy’s that I also know Martha Stewart sells. It works and doesn’t slather on too much oil.

4. The only seasoning you need is salt and pepper. That being said take any veggies you want and spray them season them throw them on tinfoil and grill to your hearts desire. I am a big fan of grilling corn, chopped broccoli florets, Portobello mushrooms, zucchini, summer squash, and tomatoes. My Aunt came over the other day with pineapple and my husband grilled it right on the grill no foil needed and we topped our burgers with it.

As for a good grillable burger. Which is every vegan’s 10million dollar question… My husband makes my Vegan Boca Burgers on foil on the grill or Dominix Eggplant Burgers. Perfect with a little ketchup and mustard!

A good grillable sausage? I am obsessed with Tofurky’s Beer Brats. I mean obsessed. No foil needed and I will eat them year round. We also do soy hot dogs and all seem to be good so I just get whatever is on sale. The kids don’t notice the difference but on a side note cook them in a hot dog toaster or microwave. The grill sometimes overcooks them fast. You can place on for a second after for the grill markings.

My Vegan Easter Dinner Menu

Being Vegan at Easter is a strange situation. Easter is about honoring a man who died for our sins and the celebrations of compassion, faith, rebirth and yet we kill animals to celebrate. Does that mean the ham is supposed to be Jesus and we are just reenacting this whole mess, like at church how we eat the bread and call it the body of Christ? Kinda odd how us humans do things isn’t it? At least the Eucharist is vegan. I think.

Last year we skipped the normal brunch with my family because of some internal issues with the family and my wedding was about to happen. It was a crazy time. This year we are doing a dinner at the parents house. My husband lives for these events because he can feast on meat and cheese (even though he is lactose intolerant) until he passes out in a food coma. I however know that at these events it is a time to cook the night before or analyze menus of possible “brunch” spots for weeks so that I can call and preorder my veganized entrée. I preorder now in most cases because certain parts of my family get very irritated with my vegan ordering and the fact I always end up explaining “why” I am vegan. I don’t mind telling the story (because it was a health issue and not some factory farm scary story) but I have learned that it makes a very sensitive issue (food) a more sensitive issue to those that may already be hyper aware of poor eating habits and their own choices that they are silently sensitive of.

So this year is good because I am bringing my own food to my parents and that is the easiest way to guarantee I eat well on a holiday. Although I must note my mother has become quite the vegan friendly chef and is constantly finding new vegan foods and recipes for me. Once I got the green light, I then fell into a confused panic. What do I substitute for the traditional Ham dinner? I could’ve made a killer brunch but a ham dinner? That is hard.

So I inventoried several traditional Easter Dinner “Menus” and picked items that were the most common:

  • Glazed Ham
  • Parker House Rolls
  • Scalloped Potatoes
  • Cooked Asparagus
  • Cooked Carrots
  • Salad

When I took a look at this menu I thought this is easy to veganize except for the ham (and I am not much for Asparagus but whatever), and the ham is always a staple. Which was my original debacle. Some serve Lamb instead but I was hard pressed to find a faux lamb roast on a few days notice either. So I decided I will recreate every item on this menu with a vegan option recipe and I will have to figure out something for that rich sweet and salty ham. I could be simple and just throw in a roast of any sort. A field roast from the refrigerated section or a Gardein Holiday Roast but no, no, no… I am going to master this with an option that will be just as filling and tasty and will harmonize with this spring Easter theme without being too Hippie/Crunchy/Healthy since it is an indulgent feast we are having, no?

Let us start with our cooked veggies.

Maple Glazed Carrots

Ingredients:

1 package Peeled Baby Carrots

3 tbsp olive oil or an olive oil sprayer

1/4 cup maple syrup whisked with 2-3tbs of water

Kosher Salt

Preheat Oven at 425degrees. Spray carrots with olive oil or toss in olive oil and place in a roasting pan or in a cake pan if you don’t have one. Sprinkle with salt and then use a basting blush to baste carrots with syrup/water mixture. Once all are basted drizzle any excess over the whole pan of carrots. Roast until brown and soft.

Braised Asparagus

Ingredients:

1 bunch fresh asparagus

3 tbsp olive oil or olive oil sprayer

kosher salt

ground black pepper

1/8 cup dehydrated minced onions

1/8 cup water

Preheat oven to 425degrees.

In a pan bring brown onions by heating water and oil and a pinch of salt together on medium low. Once the onions are lightly browned toss in asparagus salt and some ground pepper to taste. Once the asparagus is lightly seared on one side transfer to the oven in an oven safe dish until tender.

Chopped Tomato Basil Salad

Ingredients:

1/4  Bunch of Fresh Basil

2 tbsp Dehydrated Minced Onions

4 Tomatoes (freshly diced)

1/4 cup Balsamic Vinegar

1/2 cup Olive Oil

1tbsp Kosher Salt

1-2 tbsp Granulated Garlic or Minced Frozen Garlic

2 tbsp Agave Nectar

Toss shredded basil, diced tomatoes, and onions in a medium mixing bowl. In a separate small bowl whisk together all other contents until combined. Then drizzle over the tomatoes until covered and toss. I rebalance the vinegar oil combo each time I make this so please feel free to play with it or just by a simple balsamic dressing and add garlic and agave after! After everything is combined place in fridge to marinate for at least 30minutes. Serve cold.

Scalloped Potatoes

Ingredients:

1 small bag of white, red, or purple potatoes (about 2 lbs)

1/2 Earth Balance Buttery Stick

1 cup Soy or Almond Milk

1 block Daiya Havarti Cheese

1 bag Daiya Mozzarella Cheese

Kosher Salt

Ground Pepper

Thyme

Preheat the oven to 350degrees.

Gather a casserole or Pyrex dish that is decorative enough that you would serve this in. I use a circular Pyrex dish that looks similar to a pie plate. So you can see the layers.

Next you need a large mixing bowl, potato peeler, knife, chopping board/mat, and mandoline.

First grease the casserole ban using the earth balance and take the rest and place it in a microwave safe container with the milk. This will be microwaved until the butter is melted and then whisked until combined right before you place the contents in the oven.

I half peel the potatoes so then have some skin. You can fully peel if this is your preference. I then slice them on the mandoline at a varied size between paper-thin and the 2nd thinnest setting. Placing the discs of potato in a mixing bowl and sprinkling them with salt from time to time.

Next, begin layering the potato discs into the casserole. I overlap them on the edges and work around the edge and in a circular motion spiraling to the center. When I get to the center I sprinkle the layer very lightly with salt, pepper, and mozzarella cheese and then do another layer spiraling outward with potatoes again. The next payer I alternate the sprinkling to simple the havarti cheese which I pinch small amounts of and sprinkle on and do a layer of thyme. No salt or pepper this time. Then another layer and we alternate back to the salt, pepper, and mozzarella. This goes on until you reach the top layer which gets a little of each sprinkle topping and then the warm milk mixture is poured on top.

Place in the oven for 40-50 minutes. Let sit 2minutes. Serve hot.

Parker House Rolls

So I rarely suggest a recipe I have not tried or invented myself but my mother seems to be able to buy Parker House Rolls in Charlestown so I never make them (oh and Charlestown is a Boston Neighborhood known for bank robbers where my family lives but they don’t rob banks, see the movie “The Town” with Ben Affleck, it is not the same as Charleston in South Carolina; different accent, different tea). So I looked through the web and found one recipe I found trusty and delicious and that looked like what my mother so successfully procures for the holidays.

Now for the ham. This has literally taken days for me to figure out. I am not going to lie, I probably should’ve given out some silly note to just go buy a Field Roast. I also found a Vegan Ham Roll along my journeys so those that love ham feel free to find it online or at your local Natural Foods store. I however was continuing my journey until I stumbled upon this site: http://kblog.lunchboxbunch.com/2009/11/definitive-vegan-stuffing-post-recipe.html . It made me realize that I could do a lot with a vegan dish I just learned to make: Seitan! Or as my husband likes to joke “that Satan stuff”.

I buy the West Soy Seitan Cubes to make Seitan Marsala. So why not make a smoky, sweet ham version? I think we will. You will need the Seitan cubes, maple syrup, pineapple, and maybe some liquid smoke I imagine.  So I looked through some recipes and this is my version of Easter Dinner’s Main course.

Smoky, Sweet Easter Seitan Dinner

Ingredients:

Olive Oil

Kosher Salt

Ground Black Pepper

1 Package West Soy Seitan Cubes

1 can crushed pineapple (optional)

1 tbsp Maple Syrup

1tsp liquid smoke

In a deeper frying pan place olive oil to cover the bottom of the pan. Toss in Seitan Cubes once the skillet is warm. Next sprinkle the seitan with salt and pepper to taste. Toss the seitan in oil with a spatula until lightly browned avoiding splashing the oil, then add liquid smoke and maple syrup. Allow to reduce slightly and carmelize, stirring constantly to avoid sticking. Then toss in crushed pineapple right before serving for a ham and pineapple vibe if you feel so inclined.
