Perfect. Toll-House-Style. Vegan. Chocolate Chip Cookies.

I love chocolate chip cookies. I love chocolate chip cookie dough even more. And in an honest, yet disgusting unveiling of my inner glutton, I love when you cream the butter, vanilla, and sugar together to make chocolate chip cookies. When I was a kid I used to try to steal dollops of the creamed mixture when my mom wasn’t looking. It was so good. I am glad I didn’t know about salmonella poisoning back then or the fat content of whole butter. Luckily with vegan baking, that salmonella is never a problem so yea… eat all the cookie dough you want! Also my brother is coming for Thanksgiving Dessert with his wife and my first and only nephew Baby Nolan and he (my brother) is a cookie monster, so I wanted to be able to make him chocolate chip cookies that I could also eat and so could any of my dairy intolerant family. My brother loves cookies so much I got him a replica cookie jar from our childhood for Christmas last year and it was not easy to find an owl cookie jar either! This will definitely be an experience thanks to my cookies 🙂

That being said here is my chocolate chip cookie recipe that I have been working on for ages. Every time I start I become uninspired by dry cookie dough (which every vegan can relate to due to the lack of eggs) and of course the ones that crumble or the ones that don’t taste quite right. These are not any of those. They are gooey and crunchy on the edges and melt until they are just thin enough but still soft inside. If you love cookies… you will also love me after you make this recipe.

Perfect Chocolate Chip Cookies

  1. 1 cup of earth balance organic buttery spread
  2. 2-3 tablespoons of maple syrup
  3. 3 flax eggs (3 tablespoons of water and 1 tbsp powdered flax per egg)
  4. 2 tablespoons of vanilla extract (I use Penzey’s Mexican)
  5. 1 and 1/4 cups of vegan sugar (try half brown sugar if you have it for a richer flavor)
  6. 2.5 cups of all purpose unbleached flour
  7. 1-2 teaspoons of salt (I use kosher)
  8. 1 cup of vegan semisweet chocolate chips (I used Kirkland (Costco brand) this time instead of Whole Foods)

*Optional: 1 cup of walnuts or pecans

MIXING TIME!

  • Place all dry ingredients (except chocolate) in a medium to small bowl. Mix until well combined.

  • Cream butter and sugar together in a larger bowl with a mixer. Then place all wet ingredients into the bowl and mix until well combined.

  • If you have never made a flax egg all you do is place warm water in a bowl and pulverize flaxseeds in a coffee grinder until powdered and stir. It’s that easy.

  • Slowly add dry ingredients to wet ingredients and mix until a dough forms. I use my hands but a mixer works well too.

  • Last toss in chocolate chips and any nuts and knead into the dough. It will be a little oily.

BAKE:

  • Preheat oven to 350 degrees.
  • Place a silpat or parchment on your baking sheet. These cookies WILL STICK OTHERWISE! This is very important.
  • Once the oven is completely preheated, place balls of cookie dough on the silpat or parchment lined cookie sheets.
  • Bake for 20-22minutes.

  • Remove let sit for 5-10minutes and then transfer to a cookie cooling rack.

Vegan Chicken and Rice with a Savory, Creamy, Sage Pumpkin Sauce

When you are a kid in any part of the world it seems like “chicken and rice” is a staple type of food. How those components are dressed is different depending on time of year, climate, and culture but all those aside we can all agree we kinda love the simplicity of this dish. It is fall and I had a few friends show up unexpectedly at my house last night. I literally had NO idea they were coming with their two kids and fairly large German shepherd – coyote mix (Ryder) who is my tiny 9 lb rat terrier – chihuahua mix’s (Lola) best friend (I know it’s odd but adorable. Pics of Lola are posted below). That being said I had to make up food in a snap for an all omnivore crowd with one child that is citrus and citric acid intolerant. That means no tomatoes or lemon or orange or lime. Which, oddly, I use quite a bit. So I figured a nice chicken and rice dish with a pumpkin cream sauce sounded easy enough. I grabbed my steamer and away we went. I steamed Rice Select Royal Blend with Red Quinoa on the brown rice setting of my steamer/rice cooker with water salt and earth balance per the cartons instructions and then went off to make my pumpkin sauce.

The upside? They brought a raw vegan pumpkin pie that was sooo delicious. Thanks guys!

Chicken with a Creamy Sage Pumpkin Sauce

Ingredients:

  • 1 Container Beyond Meat Chicken-less Strips (lightly salted)
  • 1 can Pumpkin
  • 2 tbsp dehydrated onion
  • 1-2 tbsp Salt
  • 2 pinches Ground Pepper
  • 4 tbsp ground sage
  • 1-2 tsp Thyme
  • 2 tbsp granulated garlic
  • 1/2 cup Daiya Mozzarella
  • 1/4 – 1/2 cup Nutritional Yeast
  • 1/2 cup Soy Creamer
  • 1/4 cup Pacific Natural Foods Hazelnut Milk

Cook:

  1. Place medium to large sauce pan over medium heat.
  2. Add all ingredients to sauce pan except chicken.
  3. Dice chicken set aside.
  4. Stir ingredients until mozzarella melts into the sauce.
  5. Add chicken. Simmer covered for 15 minutes.
  6. Serve over or beside rice.
  7. Garnish with parsley and unsalted raw chopped pecans.

Vegan Baked Macaroni and Cheese

I really really love Mac and Cheese. I love Amy’s new vegan rice mac and Daiya cheeze. I love my own vegan bacon mac and cheese. I love that whole foods squash casserole mac and cheese that I make with the stuffing topping. I mean I love anything even Mac and Cheese related. It is such a wonderful comfort food that I think anyone can relate. When I was detoxing off omnivore food after my surgery I remember crying in a CVS full of exiting hormones telling my husband I needed the instant mac and cheese in the cup and I was probably going to have a melt down if I didn’t get some. Yea it was dramatic. And no he didn’t leave me, he just ushered me out. I remember thinking I am acting like a pregnant woman with these hormones. Well thankfully I am no longer going through the detox period of becoming vegan and I also can make mac and cheese (vegan) anytime I want. This recipe is how I feel I would best be able to mimic the baked macaroni and cheese I made back when I was not vegan. This is not your 1980’s blue box macaroni and cheese. This is the real stuff. I think this is the best way to think of “homestyle” or “comfort” food recipes. These are not meant to be the most healthy but are generally far healthier than their omnivore predecessors. I hope you love the ooey, gooey yumminess as much as I did.

Baked Macaroni and Cheese

Ingredients for Sauce:

  • (1) block Daiya Cheddar   IMG_2528
  • (1) cup Soy Creamer   IMG_2531
  • (1) stick Earth Balance Buttery Sticks   IMG_2532   IMG_2533
  • 1/4 cup Nutritional Yeast (”nooch”)   IMG_2529
  • 1/4 tsp Turmeric powder   IMG_2539
  • 1/2 teaspoon Yellow Mustard   IMG_2537
  • 1 tablespoon Thyme   IMG_2534
  • 4 tablespoons salt
  • 1 teaspoon granulated garlic   IMG_2535
  • 1/2 cup all purpose flour

Ingredients for Bake:

  • 2lbs of elbow macaroni (I use whole wheat)   IMG_2536
  • 1 bag Daiya Cheddar Style Shreds   IMG_2548
  • 1 cup or more of Panko Flakes (breadcrumbs)   IMG_2549

Prepare Sauce and Macaroni:

Preheat oven to 350 degrees.

In a large pot bring salted water to a boil. Add elbows and cook until al dente. Drain and Set aside.   IMG_2540

In a sauce pan place all sauce ingredients except flour in a pot and stir until well combined and a little thick. It will be salty but this is good because you will need that to season the pasta.   IMG_2538      IMG_2541

Add flour last. The sauce should be pretty thick but pourable at this point.  IMG_2543   IMG_2545

Baking:

Spray a casserole pot with oil and then add macaroni.

Pour sauce over macaroni and mix until well infused.

Add Daiya Shred and mix in until well incorporated. They will melt during baking.   IMG_2547   IMG_2546

Next top with panko and a few pinches of salt if you want (I even give a few quick sprays of oil to ensure browning).   IMG_2557   IMG_2556

Cook for 10-15 minutes. If you want it more brown cook 30 minutes but double the sauce recipe in order for the recipe not to dry out.  IMG_2555

Side Note: When reheating this dish from leftovers always place some water in the bottom of the bowl. This will ensure the pasta does not dry out in the microwave and the cheese can remelt. You can also add more cheese with the water. I do the Daiya Havarti to add some spice!

Vegan Lasagna

Let me just start by saying that when I was NOT vegan, I hated lasagna. More specifically I hated Ricotta Cheese. I am not sure if it was the flavor or the weird goopiness of it all (and yes that is now a word because I said so), but it was definitely not my cup of tea. Fast forward to me as a vegan. The first vegan dish I ever made for my stepdaughters was lasagna. They were fresh off the plane visiting my husband who was just my boyfriend at the time in our 3rd floor walk up in East Boston. It was a humble apartment with high ceilings and a city view and mice and fleas and a heart shaped burn on the family room floor that made me find it charming and oh-so-urban.  We ate in our small dining room with built in china cabinet just off our oversized kitchen complete with a broken dumb waiter. I loved that place. I loved that meal because the kids gobbled it up. Since then I have made some minor changes depending on what I have in the house so I will explain those modifications as “options” but give you the base recipe. It’s yummy and not runny and delicious and healthy and all kids of good things. Eat up!

Vegan Lasagna

Vegan Ricotta Ingredients:

  • 1 package of very firm tofu
  • 1/8 cup Garlic Powder
  • 1/8 cup Nutritional Yeast (“Nooch”)
  • Kosher Salt
  • Fresh Ground Black Pepper
  • 2tbsp+ of Olive Oil
  • Basil
  • 1 can of chickpeas drained and rinsed

Marinara Sauce Ingredients (or just use Rao’s Marinara):

  • 1 small can of tomato pastePicture 077
  • 1/2cup of olive oil
  • 4 regular sized cans of crushed tomatoes
  • 1 can of diced tomatoes (get the kind with chiles for a kick!)Picture 004
  • !/2 cup of dehydrated onion or 1 onion cooked down and pureed
  • Kosher Salt
  • Fresh Ground Black Pepper
  • Basil
  • Pasta Sprinkle (I use a shake or two of this from Penzey’s)

Pasta: I use (1) package of Lasagna Noodles that are no precook and egg free which are super easy to find in any grocery market.

Cheese: Use Daiya Mozzarella and Daiya Havarti to layer and top the lasagna

Options: Sometimes instead of my vegan Ricotta I use just veggies and Daiya Havarti for the layers and mozzarella on top. Recently I layered in diced zucchini and eggplant with the havarti and it was a huge hit and lower calorie/fat. I have also just added chopped veggies as a layer on top of the sauce adn that is always a winner to. Again I stick with zucchini and eggplant. But feel free to add peppers or whatever you like!

Prepare:

  1. Mash all ingredients of the Ricotta in a mixing bowl with a potato masher until the crumbled texture of ricotta. I use at least 2 tablespoon of olive oil and a good amount of garlic powder, salt, “nooch” (nutritional yeast), and pepper. Basil is very important to this mash. Add it last.
  2. Place all marinara ingredients in a large sauce pan and mix until boiling. Simmer and allow to set for at least 45 minutes.
  3. Preheat oven to 425degrees.

Begin layering:

  1. Spray a large lasagna pan with Olive oil/Canola oil/Pam and start with a layer of sauce then noodles then cheese/vegetables and continue. Top wth mozzarella, sprinkle with salt and garlic powder, and drizzle some olive oil over it before placing in oven. I like to use seasoned olive oil from time to time and that is the same as teh pizza oil I use in my pizza recipe.

Bake:

  1. Bake for at least 30-45 minutes. Or until you can see the cheese melting and browning on top.

Cool:

  1. Allow to cool and set about 5 minutes so that the cheese is not liquid lava on your tongue. Serve hot and Enjoy!

Banana Bread Bars

There are very few things that can make me feel as cozy as banana bread. My mom would make it all the time when I was a kid (and would even bring it to my dorm in college sometimes). Saving up all the brown bananas we didn’t eat in time and putting them in the freezer. When she had enough she would make the whole house smell like heaven and it was hard to keep us back long enough for the banana bread to cool so she could cut a slice for my brother and I. My grandmother would cozy up next to me with some tea and her banana bread and on those chilly fall days we would watch infomercials and old movies at my parents house. So when I got a tweet on Twitter the other day from a follower that wanted to use up some Chia seeds I thought what better way than to give out my banana bread bars recipe! The recipe is easy and just requires dumping everything in a bowl and mixing and then placing it in the oven. The weather was cool over the weekend so I made a batch as a breakfast snack for my husband and I this week. They were also snacked on by both my parents yesterday while we continued mounting new things to the walls of my new house.  Note: I bribe family and friends with dinner and snacks for free labor 🙂

Banana Bread Bars

 

Ingredients:

(3) Bananas (overripe and brown is best)

1 1/2 cup Quick Oats

1 tsp tapioca granulated

2 tbsp chia seeds

1/4 cup of Raw Agave Syrup/Nectar

1/4 cup raw unsalted pistachios

1/4 cup shredded sweetened coconut

1/4 cup chopped pecans

1/4 cup white chocolate chips (I use Lieber’s White Decorative Chips)

Spectrum Coconut Oil Spray for pan

Preparation:

  • Place white chips, nuts, seeds, coconut, and tapicoa in a medium mixing bowl and stir until combined.
  • Add quick oats. Stir until combined.
  • Add bananas (i ususally microwave frozen bananas for 1 minute and then add them). Mix until thick adn well combined throughout.
  • Add agave and fold in.

Cook!

  • Preheat oven to 350 degrees.
  • Spray a bread pan with coconut oil.
  • Place bar mixture into bread pan and pat flat with spatula.
  • Bake for 30-40minutes until the sides turn brown and the center is firm tot he touch.
  • Cut into 6 bars and serve after cooled about 15-30minutes.
  • Enjoy!

Meatless Monday Meal Menus and Recipes

At my office there are quite a few folks trying to do Meatless Mondays for environmental and health reasons. We have a fabulous Wellness Committee that I am honored to be a part of that organizes everything from 15minute chair massages to bootcamps to a Wellness Day once a year where everything that helps us be healthy comes together. This year there was healthy food, healthy activities, mindfulness activities, ecofriendly ideas for the year, carpooling incentives, etc. It’s amazing! I am very blessed to be here. I held the Meatless Mondays booth feeding the masses vegan and vegetarian foods and giving them the ecofriendly reasons to try Meatless Mondays as well as health benefits and of course the history behind it all. It was fun. But now is the hard part. Months have passed and my coworkers and others around the world participating in Meatless Mondays have to scour the fridge, the internet, and the grocery for menu ideas for the family when Monday comes around. Holy Guacamole!

I can’t pinpoint the exact moment I decided to eat avocados but I know it wasn’t when I lived in Southern California where they grow and I would’ve had the best opportunity at this particular produce. I am funny sometimes in that way. I always find a way to randomly miss a great opportunity like when I got parasite in Guatemala the day before I was supposed to zipline through a rainforest a life long bucket list item. Instead I was in the parking lot getting sick next to a van. But I digress. Back to the avocado, I was always turned off by the green black pimply shell and the bring mushy green insides of this so-called fruit. I knew it was fairly fatty but everyone seemed to love it as some sort of super food. So I categorized it with all those other superfoods like Wheatgrass and Seaweed and Blue Green Algae all of which (at that point) I was not buying into. They seemed alien and gross and I preferred Cheetos and Frozen Pizza. I remember trying guacamole once because my friend CiCi demanded it was amazing at a local mexican food chain one night. I thought it was soupy bland and boring. Then sometime in the past year I started putting avocado on my sandwiches to bulk them up a little after having warmed up to the smoothness of them against spicy roasted peppers at a peruvian sandwich shop near Downtown Crossing in Boston before I went vegan. I decided it was time to try guacamole but on my own terms. I would have to make it myself. I scoured the internet and saw about a thousand different recipes and gave up on them all. What flavors would I want? What would make it fresh? My mom says cilantro tastes like soap and avocados like dirt so how can I offset those flavors that she thinks she tastes so she won’t gag at the next dinner party? So I spent the day in the grocery store and then in the kitchen mixing the flavors together until I got what I wanted. I didn’t want mushy, I needed some acidity, I needed salt. So here is what I produced. It is both mom and husband approved and everyone that has tried it said the same thing “I usually don’t like guacamole from the store but I love this it’s so fresh tasting!” Mission accomplished.

Guacamole

Ingredients:

1-2 capfuls of lemon juice

2 avocados

1 container of Whole Foods PreMade Salsa Fresca (or you can make it:  http://www.wholefoodsmarket.com/recipe/learn-cook-fresh-salsa)

Kosher Salt

Fresh Ground Pepper

Time to Prepare!

  1. I make sure that both of my avocados are a little soft to the touch they don’t have to be super squishy but a finger imprint and a dark skin almost black are good signs.
  2. I then slice them in half by placing them upright like a pear and going straight down until I hit the seed and then circling around the seed keeping that straight line of cutting it in half.
  3. I pull the two halves apart and I either scoop out the seed with my avocado tool or if it is in the dishwasher I pull it out with my fingers or I stick a knife in it and pull until it loosens up and falls out.
  4. I then scrape out the contents with my avocado tool or make a slice down the center of the fruit flesh without piercing the skin and then across making little blocks and turn it inside out to pop out the blocks of avocado like ice cubes in a tray.
  5. I take all the cubes and mash them lightly with my avocado tool or a fork but I make sure it stays chunky. Over mashing will cause it to get soupy when you add the lemon juice and salsa.
  6. Then add kosher salt and pepper to taste. I use at least 1-2 teaspoons of salt and a few grinds from a small pepper grinder.
  7. Add the capful or two of lemon juice (I use Real Lemon) and then toss with a fork.
  8. Last add 2-3 heaping spoonfuls of the salsa fresca to the mixture and lightly mix. This adds the exact freshness that the guacamole needs to not be bland. I love that Whole Foods prepares it and has it on ice in the prepared foods section. I would hate to have to cut up all those tomatoes and onions. 
  9. Serve with corn chips or on top of my chili recipe.

Weight Watchers Points: 1/4 of bowl is 4 points. 1/8 is 2 points. So eat it up with some fresh chopped veggies or in a veggie soup for a low point dinner or lunch!

Fillo Primavera: Veggie and Cheese Filled Pastries

I love that there are so many types of pastry and dough on the market that are vegan. Mostly because Crisco and Shortening are vegan, not healthy, but vegan none the less. So when I was craving something like a Beef Wellington pastry I thought oooh I bet I could make those with fillo dough, pie dough, Pillsbury Croissant Dough, or even pizza dough! So for my first attempt I didn’t go straight to the Gardein Beef but instead to some veggies and Daiya cheese but please feel free to try these with any type of faux meat, vegetable, cheese, or even fruit! The Farmer’s Markets are brimming with good things lately so I encourage you to experiment with this. Make an eggplant parm fillo or even a butternut squash one with a pinch of cinnamon and brown sugar try a dessert fillo with peaches and earth balance , sugar, ginger, and cardamom. Whatever you can imagine will fit perfectly in this dough!

Vegan Fillo Dough

  • 1 box Organic Fillo Dough
  • 1 head broccoli
  • 2 tomatoes
  • 1 block Daiya Havarti Cheese
  • Kosher Salt
  • Pepper
  • Garlic
  • Dehydrated Onions
  • Olive Oil
  • Optional: 1 Container of Victoria Vegan Roasted Red Pepper Alfredo Sauce or Rao’s Marinara Sauce (Victoria Vegan Alfredo Sauces are available at www.veganessentials.com and Rao’s Sauces are available in most grocery stores including Whole Foods)

Prepare!

  1. Chop all veggies into tiny pieces to accommodate the fillo packages that will go in the muffin pan.
  2. Preheat the oven to 350 degrees.
  3. Spray muffin pans lightly with olive oil.
  4. Cut fillo dough into squares twice as large as the muffin tin holes.
  5. Place at least 3 sheets of the fillo dough square into each muffin tin hole.               Fillo Dough
  6. Spray dough with olive oil, sprinkle with Salt, Pepper, and Spices.
  7. Place chopped veggies and crumbled cheese into each fillo muffin.                                                                   Fillo Filling
  8. Add 1-2 tsp of optional sauces at this time like Victoria Vegan Roasted Red Pepper Alfredo or Rao’s Marinara.         Fillo Filling 2
  9. Sprinkle tops with more salt, pepper, and spices.
  10. Bring excess dough to a point and twist. Spray with olive oil and a sprinkle of finishing salt.

Cook!

  1. Bake for at least 15minutes or until the dough on top starts to darken and the dough separates from the sides of the muffin tin. It may take longer depending on how dense your cups and what types of ingredients you filled it with.      Fillo Baking Done
  2. Note: Use more fill sheets for juicier fruits and veggies and less for more dense foods like chicken and broccoli.
  3. Serve immediately and enjoy!

Quick and Tropical Mexican Rice Plate

When I first met my husband I lived in San Diego, California. I ate in for most of my meals and he ate out for most of his. I learned that he was beyond obsessed with burritos. I liked burritos well enough but the tortilla was always a little to filling for me. I prefered rise dishes or the filling over a salad. One day he made me this filling of beans and fish and salsa in the oven and put it over a salad for me and I was forever in love with it. I now place it in burritos or over rice all the time but instead of fish I use vegan chicken and he still uses fish. He prefers it over rice and in a burrito. So I will show you both and I will show you the quick way without boiling rice or making pineapple salsa from scratch 🙂 Don’t forget that anything can be subbed for the chicken portion. You can place in veggies, roasted peppers, portobello mushrooms, etc.

 Gotta love a quick Meatless Mondays dish for the whole family with easy clean up!

Tropical Mexican Rice Dish

Ingredients:

  1. 1 package Spanish Uncle Ben’s 90 second rice
  2. 4-8 Flour Burrito Tortillas (I like the Fiber One 80 calorie ones)
  3. 1 jar Newman’s Own Organics Pineapple Salsa
  4. 1 can Fat Free Refried Beans (I use Old El Paso)
  5. 1 container of Beyond Meat Chickenless Strips Lightly Seasoned
  6. Optional Toppings: Onions, Hot Sauce, lemon, lime, garlic powder, salad, etc.

Baking:

  • Preheat oven to 425degrees.
  • On a long piece of aluminum foil smear 1/4 to 1/2 cup of refried beans in a circle in the center.
  • Place chicken (or veggies or fish if you aren’t vegan) on top.

  • Cover with salsa and any optional items. I cover with the onions and hot sauce first and then the salsa.
  • Bring sides of tinfoil together and roll downward. Fold other sides into center.
  • Place directly on oven rack. Bake for 25-30minutes (longer for fish less for chicken).
  • Remove from oven.
  • Place 90 second rice in microwave.
  • Place 1/4cup – 1/2cup of rice in each burrito and top with oven baked filling.

Broiled or Grilled Peaches with Caramel Sauce

In the summer there are a few fruits that just beg me to eat them. Peaches are definitely one of them. The thing about peaches however is that other than eating them raw, putting them in iced tea, or making a galette I was always afraid to do much else with them. I mean they are soft and super juicy and I feared that any sort of cooking would reduce them to a sticky mess. Well the other night I proved my own fears wrong.

I invited a few of my guy friends over to have a cookout at my home with my husband and I. I made spiced vanilla cupcakes from the box (Organics brand using egg replacer and a dash of Penzey’s Cake spice then finished them off with a vanilla sugar). Then I took fresh peaches from my local Whole Foods in Swampscott and sliced them in half cut out the pit and put the oven on. The grill was off limits since my husband had been grilling steaks on there for the guys and I was not putting my peaches on that mess. Yuck.

The result was a softened warm juicy half peach enrobed in a quick stovetop caramel drizzle next to a slice of delicate vanilla spice cake. It was heaven and it was quick. Even the guys sighed when they ate them.

Here is how I did it:

3 peaches
Coconut Spray Oil (like Pam but with Coconut Oil, I use Spectra brand)
1 Earth Balance Buttery Stick
1 cup brown sugar
1/3 cup Soy Creamer

  1. Preheat oven at 400degrees.
  2. Wash peaches to slightly de-fuzz them.
  3. Slice peaches in half and remove the pit.
  4. Spray a cookie sheet with Coconut Oil.
  5. Melt 2tbsp of earth balance in a teacup in the microwave and baste the inside and outside of the peaches until well covered.                                                                                                                          peach preperation
  6. Place peaches flesh side down on cookie sheet with fuzzy side up.                                        peaches baking
  7. Bake until they appear to be bubbling juices out about 15-20minutes.
  8. Then turn the broiler on to HI, move the peaches to the top rack, and broil until brown and black spots appear on the top of the peaches about 3minutes. This simulates the grill marks you would get if you grilled them instead. If you were to grill them you would do something similar with keeping them on the top shelf until then were cooked and soft and then bring them down to the lower grill grate to get the grill marks on them.                                          peaches broiled
  9. In a medium sauce pan mix brown sugar, remaining butter, and soy creamer over medium until melted and combined. Be careful it does not burn and stir often.
  10. Once caramel is reduced remove from heat.
  11. Drizzle peaches with caramel and serve with your favorite cakes or ice cream!
